Introduction

Number of Servings: 12

Ingredients

    Banana, fresh, 2 medium (7" to 7-7/8" long)
    Butter, salted, 4 tbsp
    Egg, 1 large, beaten
    Vanilla extract, 1 tsp
    Granulated Sugar, .5 cup
    Baking Soda, .75 tsp
    Salt, .25 tsp
    Applesauce, unsweetened, .15 cup
    *Flour, white, 1.25 cup

Directions

No need for a mixer for this recipe. Preheat the oven to 350F (175C).

With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

Mix in the sugar, egg, and vanilla.

Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last, mix.

Fill muffin tins 3/4 full and bake for 45 minutes.

Cool on a rack.
