Energy Salad

Introduction

Number of Servings: 2

Ingredients

    3 cups mixed baby greens
    1 cup spinach (optional)
    1 small cucumber peeled and sliced
    1 medium tomato cubed
    1-2 cups sprouts
    any other raw vegetables you like in salads like beets, jicama, carrots or red cabbage
    1/4 cup olives or several slices of avocado (optional)
    1/4 cup sunflower or sesame seeds

    Light dressing
    1 clove garlic
    3 tbsp olive oil
    1 tbsp fresh lemon juice
    1/4 tsp sea salt or Spike

Directions

Combine all ingredients and toss. Be flexible, however try to keep the tomato and cukes in because their water content aids in digestion of the other contents.
