Potato Salad, 1/2 cup

Ingredients

    3 pounds raw potatoes, red or white
    6 item(s) egg, hard boiled, shelled and cut up
    1 Tbsp Vlasic Dill relish
    1/2 Tbsp mustard
    3/4 cup Kraft Miracle Whip Light Salad Dressing

Directions

Peel potatoes. Cut into bite size pieces and boil in large sauce pan until easily pierced with a fork.

Drain and cool quickly under cold water. When potatoes are cold, let them sit in colander until they drain of all water and are a little drier.

Mix potatoes with the rest of the ingredients and refrigerate for at least a couple of hours (overnight is better, though).

I add no salt so those eating the salad can salt their own since many people these days need to watch their salt intake. The relish, mustard and dressing already have some salt in them.

1/2 cup per serving.
