Bird's nest pie

Introduction

Got this out of the Once a month cookbook, and of course tweaked it! ;) I'm using MY recipe of sweet italian sausage (but using ground turkey instead of the combo of meats, so that will bring the cal count down too). This is a great make-ahead to put in the freezer for next week. Or, make 2 and freeze one. I am writing the recipe instructions as in the book..... Ingredients

    1 16-oz package whole wheat spaghetti (use 1/2, so 8 oz)
    2 eggs beaten
    1/3 cup grated parmesan cheese
    1/2 cup finely chopped onion (1/4 cup sautee'd)
    2 T butter
    1 8-oz carton sour cream (1 cup)
    1 lb Sweet Italian Sausage (see my recipe, that's what I am using for this)
    1 6-oz can tomato paste
    1 cup water
    4 oz mozzarella cheese

Directions

makes 12 servings in a 9X13 pan

Break spaghetti in half, and cook as directed on package until al dente; drain. While spaghetti is warm, combine with eggs and parmesan cheese. Press spaghetti into bottom and up sides of a well-greased 10 inch pie plate (wonder if a 9X13 would work? or an 8X8?) with a spoon. Saute onion in butter, mix with sour cream and spread over crust.

At the same time, brown sausage in a large skillet; drain fat. Stir in tomato paste and water. Bring to a boil; reduce heat. Simmer uncoverd 10 minutes, stirring occasionally. Spoon over sour cream mixture. cover dish with foil and freeze. Put cheese in a 1 quart bag; attach to side of dish.

To prepare for serving, thaw pie and cheese. Bake pie uncovered in a preheated 350 degree oven for 25 minutes. sprinkle mozzarella on top; return pie to oven until cheese melts

serve with cooked broccoli
