Lime Shrimp Lettuce Wraps

Ingredients

Lime Juice, 1 fl oz (3 Tbls)
Olive Oil, Extra Virgin, 3 tbs
Soy Sauce, 2 tbsp
Ginger Root, 3 tsp, grated
Garlic, 1 clove, minced
Shrimp, medium, 16 oz
Peppers, sweet, red, fresh, .5 large
Green onions, 2, diced
Waterchestnuts (water chestnuts), 5oz can, drained and chopped
Iceberg Lettuce, 1 head, cut in half
Directions
In a medium bowl, combine lime juice, 2 tbls oil, 1 tbls soy sauce, ginger and garlic. Add shrimp and let marinate in refrigerator for 30 minutes.
In a medium skillet, heat 1 tbls oil over medium-high heat. Add bell pepper, green onions, and water chestnuts, cook, stirring occasionally for 3 minutes. Add shrimp and marinade and cook 3 minutes, or until shrimp are pink. Stir in 1 tbls soy sauce.
Divide lettuce into leaves. Spoon about 1/4 cup mixture down center of 1 lettuce leaf. Fold edge and sides up and over filling. Repeat with remaining lettuce leave and shrimp filling.
