Ingredients

    2 cups of cubed fresh peaches or nectarines
    2 cups cooked boneless, skinless chicken breasts
    1 med cucumber, peeled and chopped
    3 Tbsp. red onion, chopped

    Dressing:
    1/4 cup white wine vinegar
    1 Tbsp. lime juice (or lemon juice)
    1/3 cup GRANULATED Splenda
    1/2 tsp. mint extract or 1/4 cup chopped fresh mint
    1/4 tsp. salt
    1/4 tsp. black pepper

Directions

Makes 2 servings (approx 2 1/4 cups each)

Mix dressing ingredients in blender and add to salad ingredients, tossing gently. Chill and serve.
