1 lb ground chicken meat
1/2 jalapeno pepper
3 Tbsp Tamari (soy) sauce separated
3 tsp chopped garlic
1 Tbsp dried basil
1 Tbsp hot sauce
2 Tbsp lime juice
1 Tbsp sesame oil
2 Tbsp vegetable oil
1 Tbsp rice wine vinegar
2 cups chopped mushrooms
3 green onions
1 Tbsp butter
2 Tbsp chopped water chestnuts
Brown chopped mushrooms and onions in butter in a skillet on med-high heat, once tender and browned remove from skillet and reserve for later.
Heat sesame and vegetable oil on med-high in the same skillet. When oil is hot but not smoking add the chicken meat mix. Cook until chicken is done. You may have to drain some juice off towards the end.
Once the chicken is done and juices drained (if needed) add the cooked mushrooms and onion as well as the chopped water chestnuts. Add vinegar and last 1 T tamari sauce, mix and serve.
Scoop meat into lettuce leaves, wrap and enjoy!
