Cajun Stew

Ingredients

    1-1/2 pounds beef stew meat, cut bite size
    2 tbsp. olive oil
    1/2 cup green pepper, rough chopped
    1 stalk celery, rough chopped
    1 cup onion, rough chopped
    2 tbsp. flour
    1 tsp each, oregano,thyme,onion pwdr.,paprika
    1/2 tsp. each dry mustard, cumin
    1/4 tsp. each blk. pepper, red pepper
    1 cup beef broth
    15 oz. can tomatoes, diced (cajun or mexican)
    10 oz. pkg. of cut okra

Directions

heat oil in lrg. pot or deep iron skillet, brown meat and veggies until meat is no longer pink. Add flour and spices, brown flour. add beef broth and tomatoes, simmer about an hour. Add frozen okra and cook another 10-15 minutes until heated through. Serve over rice (add the calories for rice of your choice)
