Thai Cucumber Salad

Introduction

A friend taught me how to make this years ago. My daughter asked me to put it on Spark People, so here it is. A friend taught me how to make this years ago. My daughter asked me to put it on Spark People, so here it is.
Number of Servings: 8

Ingredients

    6 medium cucumbers, peeled and cut into thin 2" strips
    2 cloves garlic, finely minced or put through a garlic press.
    2 tbsp. fish oil
    Juice of two limes
    1/4 cup natural peanut butter (creamy)
    1/4 cup ground peanuts (unsalted)
    1/2 tsp. salt
    2 tbsp. hot red pepper flakes

Directions

Peel and slice the cucumbers.
Add the garlic, fish oil, lime juice and peanut butter.
Stir until the chunks of peanut butter have disappeared, and the cucumber pieces are coated with a creamy sauce.
Add the ground peanuts and pepper flakes.
Makes about eight 1/2 cup servings.
