Pork Loin Chili

Ingredients

    12 oz. pork loin
    One can diced tomatoes
    One small can tomato sauce
    One can black beans
    2 tablespoons chopped garlic
    2 tablespoons cayenne pepper
    1 tablespoon cumin
    1 tablespoon chili powder

Directions

Dice pork loin in bites size cubes.
Place all ingredients into a crock pot/slow cooker.
Cook on high for 3 hours or low for 6 hours

  • I cooked this on the stove as I had time today. I cooked a pork loin and let it fall apart in the cooking. Added two sticks of cinnamon. Used a large can of the diced tomatoes and two small cans of black beans. It is so delicious. My son-in-law will love it. I may never make beef chili again !

  • I shredded the pork chunks and added some cinnamon and bell peppers. I also used the black beans and tomatoes that are chili flavored. I topped with a tablespoon of shredded parmesan but a dollop of low fat sour cream would be good too. - 7/13/08
