Fruit and Nut Granola Bars

Introduction

Number of Servings: 40

Ingredients

    Old fashioned rolled oats, 3 cups
    Coconut, 0.5 cups
    Almonds, slivered or chopped 1cup
    Dried cranberries 1cup
    Raisins 0.5 cups
    Flax seed (whole) 1/2 cup
    Sunflower seeds (roasted &salted) 0.5 cups
    Sugar 1c
    Light Corn syrup 1c
    Peanut butter 1c

Directions

Toast oatmeal, then coconut, then almonds in 300 degree oven until lightly toasted. Combine with cranberries, flax seed, and raisins and mix well. Microwave sugar, corn syrup and peanut butter until smooth and melted, then pour over mixture. Flatten into a jelly roll pan. When cool, cut into about 40 pieces. They are great, filling, full of good stuff, and travel well.
