Low Carb Meatloaf

Ingredients

    1 pound lean ground beef
    1/2 cup broth
    1/2 cup rolled oats
    1 egg
    1/4 cup chopped shallot
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper

Directions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, combine meat, broth, oats, egg, chopped shallot, salt and pepper. Mix lightly but thoroughly. Press into a loaf pan.
3.Bake for 1 hour, or until meat is no longer pink and juices run clear. Drain. Let stand 5 minutes before serving.
