Orzo Pasta with Spinach

Number of Servings: 4

Ingredients

    4 oz barilla orzo uncooked
    1 chicken bullion cube
    1 tomato
    2 garlic cloves
    1 package frozen spinach
    pass grated cheese if desired and salt and pepper to taste

Directions

Boil orzo in 2 quarts of water with a bullion cube in it (9 min)
microwave the spinach for 4 minutes, squeeze out water
place 1 tbls. evoo in pan, fry sliced garlic less than one minute, add spinach (which has been drained), add chopped up tomato, stir fry 5 minutes. When pasta is done add orzo to pan and about one cup of the cooking water. Stir and add grated cheese (optional).
