Mexican London Broil Crock pot

Introduction

This is some thing that I just threw together tonight and it turned out really good. I paired it with the Mexican rice recipe and it was wonderful. This is some thing that I just threw together tonight and it turned out really good. I paired it with the Mexican rice recipe and it was wonderful.

Ingredients

    2 Small London Broil
    2 16 oz jars Newman's Own Bandito Chunky Salsa Peach
    2 cans Low Fat Cream of Mushroom Soup
    1 c. Chopped Green Peppers (bell peppers)
    1 packet McCormic Reduced Sodium Taco Seasoning

Directions

Start by pouring one can of soup in the crock pot, add 1/2 can of water and mix water in with soup.
Place London broil on soup and pour the other can of soup along with the jars of salsa on top of meat.
Turn crockpot on high and cook for 6 hours.
Half way through cooking remove meat from crockpot and shread meat, add taco seasoning, and green peppers.
Mix everything together and add meat back to the crockpot.
Let cook for another 2 -3 hours.

Makes 8 ~ 1 cup servings
