Tuscan Tuna and Bean Salad

Introduction

This is loaded with nutrients and great for lunch. Omit the tuna for vegan, traditionally this is made with white beans, but I had soy on hand. This is loaded with nutrients and great for lunch. Omit the tuna for vegan, traditionally this is made with white beans, but I had soy on hand.
Number of Servings: 5

Ingredients

    can of soy beans
    5 oz can tuna
    1 cup tomato
    2 green onions or chives
    1 clove garlic
    1 T olive oil
    1 T lemon juice
    1 t honey
    parsley, salt, and pepper

Directions

Put tuna and beans in a bowl with tomato, green onions and parsley. Put remaining ingredients in a jar and shake til blended. Put a few lettuce leaves in a bowl, put a heaping half cup of bean mixture on top and drizzle with dressing.
