Shepherd's Pie

Introduction

a family favourite, chock full of veggies and with a low-carb twist a family favourite, chock full of veggies and with a low-carb twist
Number of Servings: 4

Ingredients

    * 1 onion, chopped
    * 1 tbsp oil
    * 500g extra lean ground beef
    * 1 carrot, chopped
    * 1 tsp salt
    * 1/2 tsp pepper
    * 2 tbsp flour
    * 1 cup beef stock (1 cube/packet)
    * 1 celery stalk, chopped
    * Pinch of thyme
    * 1 large head cauliflower
    * 1 tiny dab of butter

Directions

Fry onions in oil until golden.

Add beef, fry briskly until browned.

Stir in carrot, salt, pepper, flour, celery, thyme, beef stock.

Simmer for 20 mins.

MEANWHILE… cut cauliflower into florets and boil for 10 minutes. Drain, add the butter and mash. (I use a hand blender)

Spread beef mixture in glass baking pan and top with the mashed cauliflower.

Bake in 400F oven for 25-30 mins.
