Black Bean Hummus

Introduction

Number of Servings: 16

Ingredients

    1 cup dried black beans (Yields 2.5 cups cooked beans)
    2 garlic cloves
    3 limes, juiced
    2 tbsp Tahini (sesame seed paste)
    1/2 tsp Paprika
    1/2 tsp Cayenne Pepper
    1 tsp Salt
    1-1/2 tsp Ground Cumin
    1/4 Cup Chopped Fresh Cilantro

Directions

Soak and cook 1 cup dried black beans as directed on the package. (I use quick soak method.) Drain beans and reserve liquid. Recommend refrigerating beans. Into a food processor or blender, add pressed garlic cloves, 2-1/2 cups black beans, 2 tablespoons reserved bean liquid, juice of 3 limes,2 tablespoon tahini, 1-1/2 teaspoon cumin, 1 teaspoon salt, 1/4 teaspoon paprika and 1/4 teaspoon cayenne pepper; process until smooth, adding additional liquid and scraping down the sides as needed. Retain 1 tablespoon of Chopped Fresh Cilantro for garnish, then pulse the remaining Cilantro into the bean mixture. Put into serving bowl and garnish with Cilantro, can also use black olives. Serve with pita bread, pita chips, tortillas, etc.... Make 16 oz. 16 servings.
