Ingredients

    1 tsp olive oil
    1/2 tsp minced garlic
    8 oz immitation lobster chunks
    1/2 large tomato, diced
    1 green onion, sliced
    1 cup hot water
    1 cube chicken boullion
    2/3 cup plain lowfat yogurt
    1 tsp dried basil
    1/2 tsp dried thyme
    1/4 tsp dried taragon
    1/8 tsp black pepper
    8 oz thin wheat spaghetti

Directions

Cook 8 oz thin wheat spaghetti according to the packaging instructions.
Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic and heat for 2 to 3 minutes. Add lobster, tomatos, and green onion; heat 2 to 3 more minutes. Meanwhile, disolve chicken boullion in 1 cup of hot water. In a bowl, combine 2/3 cup of the boullion broth with the yogurt; stir until smooth. (The other 1/3 cup boullion broth is not needed for this recipe, you can save it or discard it). Add the yogurt mixture to the pan. Stir in the basil, thyme, taragon, and pepper. Cook, uncovered, over medium heat for about 10 minutes stirring occasionally. Do not allow the sauce to boil. Carefully stir in drained spaghetti.
