Mediterranean Diced Salad

Introduction

Great tasting and heart healthy summer salad that is easy to make.
It lowers your bad cholestrol, blood pressure and weight. Its only healthy fats with fresh vegtables and is low in salt.

Ingredients

    I can of Garbanzo beans (Chichpeas) drained and rinsed
    1 red Bell Pepper, seeds removed and diced
    1 Cucumber peeled and diced
    2 stalks of Celery, diced
    1/2 cup kernel corn
    I cup of grape tomatoes
    3 cloves garlic, finely diced
    Juice of 1 lemon
    1 Tablespoon of white vinegar
    2 Tablespoons of olive oil
    (or your favorite Italian dressing)
    handfull of roughly cut flat parsley

Directions

Combine the garbanzo beans, red pepper, cucumber, celery, corn, garlic and grape tomatoes in a serving bowl. I like the vegtables coarsely diced into approx. 1/2 chunks.

Rinse canned corn and garbanzo beans to reduce salt.

In a separate cup wisk together lemon juice, vinegar and olive oil. Or just add your favorite dressing.

If desired add seasoning to taste.

Serve immediately or chill.
