Tamara's Breakfast Frittata - Fresh Spinch, Dried Tomatoes, Romano

Introduction

So fresh and yummy with new garden ingredients - Scallions, Parsley, and Spinach. If you want you can substitute frozen spinach about 4 ounces completely drained. Ingredients

    6 large Egg, fresh
    1/4 cup Milk, 2%
    1/4 cup Scallions, raw - diced in food processor
    1 Tblsp Parsley - chopped in food processor with the scallions
    1/4 cup Sun Dried Tomatoes (dry these during tomatoes season and keep in the freezer - the flavor is outstanding. If you don't grow go to the farmers market and buy to make yourself)
    1/2 cup Kirklands Pecorino Romano Cheese
    1/4 tsp Kosher Salt - Diamond
    1/4 tsp Pepper, black or white your preference
    1 cup Spinach, fresh - chopped up

Directions

Makes 8 regular size muffin tin frittatas.
Works really well to take along for a picnic.

Heat an oven to 350 degrees. It will take between 20-25 minutes for these to puff up and be fully cooked.

In a Large Bowl beat together the following:
6 large Egg, fresh
1/4 cup Milk, 2%
1/4 tsp Kosher Salt - Diamond
1/4 tsp Pepper, black or white your preference

Add in the rest of the ingrediants
1/4 cup Scallions, raw - diced in food processor
1 Tblsp Parsley - chopped in food processor with the scallions
1/4 cup Sun Dried Tomatoes (dry these during tomatoes season and keep in the freezer - the flavor is outstanding. If you don't grow go to the farmers market and buy to make yourself)
1/2 cup Kirklands Pecorino Romano Cheese
1 cup Spinach, fresh - chopped up

Put little less than 1/2 cup of mixture into muffin tins to bake. If you want you can add in some fresh tomatoes, green peppers etc to make each frittata a little different and exciting.
