Chicken in Coconut Lime Sauce

Ingredients

    32oz Boneless Chicken Thighs
    2 Tbsp Coconut Oil
    0.5 Cup Green onions, sliced
    0.5 Cup Salsa (use your favorite)
    1 Tbsp Garlic, minced
    2 Peppers, Dried red hot
    1 tsp Curry Powder
    0.25 tsp Black Pepper, freshly grounded
    13.5 oz Coconut Milk (1 13.5oz Can)
    0.5 Cup Lime Juice
    0.5 Cup Coconut, grated (for garnish)
    A few Lime Slices (for garnish)
    A few fresh red hot peppers (for garnish)


Directions

1. Warm Coconut Oil over medium heat in large frying pan.
2. Add Chicken and brown.
3. Remove chicken and then add green onions, salsa, garlic dried hot peppers, curry powder, and black pepper. Cook about 2 minutes, stirring until onions are browned.
4. Return Chicken to pan, pour coconut milk and lime juice over chicken and simmer over low heat vor about 30 minutes, or until fork can be inserted into chicken with ease.
5. Remove hot peppers.
6. Place chicken on platter, garnish with limes slices, fresh red hot peppers, and sprinkle lightly with grated coconut before serving.
