Tofu Fajitas

Introduction

I didn't figure tortillas into the calorie count, so that you can choose whether to use corn, flour, or whole wheat. This is from the book "Lean, Luscious and Meatless," but I used lime juice instead of orange juice, as the authors suggested. Ingredients

    1 lb firm tofu, cut into matchsticks
    1 1/2 cups onion, thinly sliced
    1 1/2 cups green pepper, thinly sliced (calorie count figured for bells)
    1 4-oz. can chopped green chilies, undrained
    1/2 cup lime juice
    1 Tb olive oil
    2 Tb vinegar
    3 cloves garlic, finely chopped
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp dried oregano

Directions

Place tofu, onions, and green pepper in 9 x 13 pan. In a small bowl, combine remaining ingredients, mixing well. Pour over tofu mixture.

Cover pan and marinate 4 or 5 hours, stirring occasionally.

Wrap tortillas in aluminum foil and heat in a 350 degree oven for 10 minutes.

Heat a large nonstick skillet over medium-high heat. Drain tofu mixture (reserving marinade) and place in skillet. Cook, stirring gently, until vegetables are slightly tender. Add marinade, a little at a time to keep mixture from sticking.

To serve, spoon filling into the center of heated tortillas, roll and enjoy (don't forget to add tortillas to your calorie count!

  • This is tasty but a few things are off - at least for me anyway. I found that to marinate everything properly, everything should be put into a zip lock baggie--so much easier...also 1 recipe of marinade is really not enough - I doubled it and it was perfect. - 4/11/13

  • This is quite possibly the best tofu recipe I have ever tried. My husband and I simply loved it. It would be a great way to introduce tofu to the non-believers. - 7/12/10

    It is indeed delicious, but I forgot to mention I also either cut way down on the vinegar, or leave it out depending on my mood. Too much of it would be a bit weird in a Mexican recipe. Hope you enjoy it!
