FFMK Granny's Apple Muffins

Introduction

Ingredients

    6 TB Grape seed oil
    1 tsp Butter Buds
    1 cup Honey
    2 eggs or 4 egg whites
    1 1/2 tsp vanilla extract
    1 cup brown rice flour
    1 cup spelt flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp sea salt
    1/3 cup unsweetened applesauce
    2/3 cup reduced fat sour cream
    2 Gala or Granny Smith apples, peeled, cored and sliced

Directions

Preheat oven to 350 and line muffin tins

1. Beat oil, butter buds, and honey on high until light and fluffy. Add eggs one at a time and beat on low. Add vanilla
2. Separate bowl: Mix flours and remaining dry ingredients.
3. Fold half the dry ingredients into butter mixture using a wooden spoon or spatula. Stir in the applesauce and sour cream. Fold in the remaining dry ingredients.
4. Fill 1/2 muffin cup with batter. Add a few apple slices to each one and then spoon the remaining batter over
5 Bake until golden and springy, about 35-40 min,
