Ingredients

    1.5 cups whole wheat flour
    1 cup mashed very ripe bananas (the more black spots, the more moist the muffins will be!)
    1/4 cup applesauce
    2 egg whites
    3 tbs splenda
    3 tbs sugar
    1/2 cup chopped walnuts
    1.5 tsp nutmeg
    1.5 tsp cinnamon
    1 tsp ground cloves
    1 tsp vanilla
    1 tsp baking powder
    1 tsp baking soda
    2 tbs 2% milk

Directions

Pre-heat oven to 350.

Cream applesauce, sugar and splenda. Add egg whites, water and vanilla, mix. Add mashed bananas and mix.

Sift together dry ingredients together, slowly mix into the banana/sugar mix. Once combined, fold in walnuts.

Put liners in muffin pan and spray with non stick cooking spray. Fill each part 3/4 of the way full. Bake for about 20-25 mins, muffins are done with a tooth pick comes out clean and tops spring back when pressed gently.
