Oatmeal Cherry Breakfast Cookie

Introduction

This large cake-like breakfast cookie is lower in fat and sugar than most and contains such ingredients as oatmeal, whole wheat flour, Kashi GoLean cereal and dried cherries. It is also high in fiber. Ingredients

    1/2 cup canola, sunflower, or safflower oil
    1/2 cup milk
    1 egg
    1/2 cup agave or pear nectar
    1/2 cup brown sugar, packed
    2 cups oatmeal
    2 cups Kashi GoLean Crunch Cereal (with berries is best)
    1 3/4 cups whole wheat flour
    1/4 tsp baking soda
    1/4 tsp salt
    1/2 tsp baking powder
    1 1/2 tsp cinnamon
    2/3 cup dried cherries

Directions

Preheat oven to 375 degrees. Combine egg, milk, oil, and agave nectar in mixing bowl. Mix thoroughly. Add brown sugar, baking soda, salt, baking powder, and cinnamon. Mix well. Add flour, oatmeal, Kashi GoLean, and cherries, mixing after each addition. Drop by large tablespoon onto cookie sheet sprayed with nonstick spray. (Each cookie will be between 2 and 3 tablespoons of cookie dough.) Bake for 10 minutes. Because these are lower fat cookies, you may need to remove excess crumbs between batches of cookies.
