LOLO's Ultimate Chicken Noodle Soup

Introduction

Number of Servings: 10

Ingredients

    2 chicken breasts
    128 oz Organic low sodium chicken (or vegetable) broth
    6 oz (3 cups cooked) Organic brown rice pasta)
    2 celery stalks (chopped)
    3 carrots (chopped)
    5 sprigs of fresh dill (chopped)
    2-3 green onions/chives (chopped)
    squeeze of lemon juice
    salt & pepper to taste
    slash of water

Directions

Boil chicken until cooked in a large pot. In separate large pot, steam carrots, onion, and celery until tender with a splash of water. In separate pot, boil pasta and strain. Meanwhile, cool chicken a bit and then shred. Add broth to veggie mixture, and bring to a simmer and gradually add chicken shreds, dill, lemon juice, salt & pepper to taste, and green onion. Serve in individual bowls, and add noodle to each bowl- DO NOT pour cooked pasta in soup mixture, as it soaks up too much broth and becomes mushy- add noodle to each serving dish.
