LOLO's Orzo Pasta Salad

Introduction

This is a FABULOUS carb/good fat fix for your daily intake. It's great for pre-workout fuel or to take to any potluck or barbecue! This is a FABULOUS carb/good fat fix for your daily intake. It's great for pre-workout fuel or to take to any potluck or barbecue!
Number of Servings: 10

Ingredients

    1 box of Barilla Orzo Pasta (cooked)
    2 medium tomatoes (chopped)
    1 can (15oz) Garbanzo Beans (Chickpeas)
    1/2 cup chopped green onion
    1 chopped cucumber (apporx: 2 cups)
    1/8 cup olive oil or herb olive oil
    salt, pepper, basil, garlic to taste (I like lots of basil!)

    * You can use rice or whole wheat orzo- may slightly change nutrition facts- for the BETTER!

Directions

Boil Orzo Pasta according to directions on box. Meanwhile, chop tomatoes, cucumber, and green onion. When cooked, strain pasta and run cold water over. Mix pasta, tomatoes, cucumber, onions, garbanzo beans, in bowl. Add olive oil and season as desired. Chill in fridge and enjoy!

Serving size: about 1 cup
