Baked Yellow Squash Dessert

Introduction

A Dessert, baked in the oven, using yellow (summer) squash A Dessert, baked in the oven, using yellow (summer) squash
Number of Servings: 8

Ingredients

    3-4 medium Yellow Squash
    3/8 cup margarine
    1 cup sugar (or Splenda)
    2 tbs Vanilla Extract
    1/4 teaspoon salt
    3/4 cup all-purpose flour
    3-4 large eggs
    12 oz. evaporated Milk

Directions

1.) Boil or Steam Squash until soft - Mash
2.) Add all ingredients to squash and mix thoroughly
3.) Add 1/2 tsp of cinnamon and/or nutmeg if desired
4.) Pour into 9 x 13 buttered cassarole dish
5.) Bake at 375 deg. for 25-30 minutes or until slightly
brown and knife comes out clean.
6.) Serve warm with Cool Whip as topping

  • The recipe, made as directed, gives you a squash pudding of sorts. I used 1/4 cup of butter and the suggested cinnamon as well as a dash of nutmeg. Mine also needed to bake at least 35 min. - 8/25/13
