Ingredients

    1-7 oz. can water packed white albacore tune
    2 TBS chopped celery
    2 TBS chopped bell pepper
    2 TBS chopped sweet onion (optional)
    1 TBS sugar free Vlasic sweet pickle relish
    1 TBS plain Greek yogurt
    1 TBS Hellman's or Best Foods Real Mayonnaise
    1 tsp. Dijon mustard
    2 slices rye bread
    2 slices Swiss cheese

Directions

Drain tuna, mix with chopped celery, bell pepper, onion, relish, mayonnaise and mustard. Chopped onion is optional but if you choose to use it, sweet onions are best. Place 1/2 cup of this mixture atop one slice of rye toast with one slice swiss cheese. You can put the cheese atop the tuna salad and microwave for 45 seconds for a fast tuna melt. Makes 2-1/2 cup servings
