Banana Nut Bread
Introduction
I tweaked a recipe that I have used for a number of years to bring down the fat and calorie count. I tweaked a recipe that I have used for a number of years to bring down the fat and calorie count.Number of Servings: 12
Ingredients

1 1/2 C whole wheat flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 C Splenda
1/3 C applesauce, unsweetened
2 Tbsp milk
2 eggs
1 C mashed bananas
1/2 C chopped pecans (or your favorite), optional
Directions
Preheat oven to 350 degrees.
Stir dry ingredients together: flour, baking powder, baking soda, and salt.
Combine Splenda and applesauce along with eggs and milk, using a hand mixer. Add flour mixture and banana alternately to egg mixture, beating until smooth after each addition. Fold in pecans.
Bake in a lightly greased loaf pan or muffin tins. A loaf will take about 60 to 65 minutes to bake. Baking time will need to be adjusted for other types of pans.
Makes 12, 2-ounce servings.
