Ramen Cabbage Salad

Introduction

Number of Servings: 8

Ingredients

    1 head cabbage (I prefer napa cabbage) shredded
    -----------------------------------------------------------
    1 pkg Chicken Ramen noodles--broken up
    3 Tbsp sesame seeds
    1/4 cup almonds sliced
    1 Tbsp margarine
    -------------------------------------
    1/3 canola oil (substitute part of the oil with toasted seame oil if you want)
    2 Tbsp white vinegar + 1 Tbsp rice wine vinegar
    2 Tbsp sugar
    1/2 tsp kosher salt
    1/2 tsp black pepper
    Ramn Chicken falvor packet (left from noodles)
    10 shakes of low sodium soy sauce




Directions

Toast noodles, almonds, and sesame seeds in margarine until crunchy (do NOT overcook--yuck!) Set aside.

For dressing, combine oil, vinegar, sugar, salt, pepper, chicken packet, whisk thoroughly. It should taste sweet & sour.

Combine cabbage and noodle mixture in a large bowl, top with dressing and toss well. Serve immediately.

Makes 8 servings, about 1 1/2 cups each. (To save calories, I like to skimp on the dressing or serve it on the side.)

*You can prepare everything in advance too, just keep it all separate til ready to serve. (cabbage/noodle mixture/dressing).
