Introduction

Number of Servings: 4

Ingredients

    1 med tomato cut into wedges
    1 cup cucumber slices
    1 small onion or 1/2 cup chopped
    3 Tbs vinegar
    4Tbs extra light olive oil
    1 tsp greek seasoning *optional
    2 Tbs fresh basil

Directions

Core tomato and sclice into 6 wedges, you can cut them smaller if you like. Slice one cup of cucumber and 1 small onion. sprinkle 1 tsp greek seasoning over veggies. Mix olive oil and vinegar and pour over top. toss to coat vegeatables. top with 2 tbs fresh basil right before serving

*note The ratio of vinegar to olive oil is strong you may want to adjust it to your taste. I use the extra vinegar because it helps regulate blood sugar levels

makes 4 3/4 cup servings
