Rebecca's Stewed Rhubarb

Introduction

Rhubarb cooks up into fresh, pink or light green sauce with lots of vitamin C. Delicious stirred into yogurt or with ice cream. Rhubarb cooks up into fresh, pink or light green sauce with lots of vitamin C. Delicious stirred into yogurt or with ice cream.
Number of Servings: 12

Ingredients

    2 cups diced rhubarb
    1/4 cup sugar
    1 T. Grand Marnier or other orange liqueur (optional; could also use a splash or OJ or even water)

Directions

Combine ingredients in a saucepan and simmer over medium heat until cooked down to the consistency you like, 5 to 10 minutes. Taste and add more sweetener if necessary.

Makes about 1 1/2 cups. Typical serving 2 T.
