1- 2 Tblsp of olive oil Zucchini, cut into small chunks yellow squash, cut into small chunks 1 sm. onion, diced 2 cloves of garlic crushed 2-3 roma tomatoes, diced 1 can beef broth 1 sm. can tomato paste water to thin basil to taste salt & pepper 1/2 - 1 cup of uncooked ditalini pasta
saute zucchini, yellow squash and onion in oil until almost done. add tomatoes, basil salt and pepper and garlic. Add beef broth, tomato paste and water. Cook til boil add ditalini pasta. Cook til pasta is al dente. Serve with grated parmesan if desired.
