Introduction

you can use fresh buffoalo mozzarella as well. you can use fresh buffoalo mozzarella as well.

Ingredients

    1.55 Lb (750 gr) cherry tomato
    3/4 cup panko breadcrumbs
    1Tbs (3 tsp) finely chopped fresh basil.
    salt an d freshly ground pepper to taste
    1/2 Lb (250 gr.) Mozzarella (belGioso 8oz sliced.

Directions

preheat oven to 400.F (200.C) line a baking pan with aluminium foil and oil the foil slightly
cut tomatos in half and layer in pan.
in small bowl combine breadcrumbs , garlic , basil , and salt and pepper to taste .Sprinkle this over tomatoes and roast until tomatoes are soft and begin to shrivel,about 15 min.Transfer tomatoes to a warm platterand arrange cheese slicesaround them.Garnish w/basil leaves and serve. Serves 8.
