Submitted by: IVORY1825

Introduction

A gluten-free, creamy, spicy Southwestern style casserole. Could replace the chicken with another 1/2 cup beans for a vegetarian dinner. A gluten-free, creamy, spicy Southwestern style casserole. Could replace the chicken with another 1/2 cup beans for a vegetarian dinner.
Number of Servings: 2

Ingredients

    1 tsp olive oil

1 - 28oz can diced tomatoes, drained well

    1 tbsp margarine/butter/olive oil

    2 taco shells
3 oz low fat Mexican style cheese

Directions

Saute jalapenos, onions, green chili, chicken in 1 tsp olive oil and a little water

Add diced tomatoes and simmer for about 5 min

Make a roux (mix together) with the butter and the flour over medium-high heat
Add the milk to the roux and mix well, stir until thickened
Melt sour cream into the white sauce
