Cucumber Tofu Rolls

Number of Servings: 5

Ingredients

    1 cucumber
    1 large carrot
    4" daikon radish
    sprouts, alfalfa or pea
    4 oz extra firm tofu, baked and marinated is good too!

Directions

Ribbon cucumber into slices on narrowest setting of mandolin cutter. Julienne carrot and daikon radish, slice tofu into narrow strips. Roll tofu, a few sprouts, a few carrots and a few radish slivers in one cucumber slice. Makes 5 - 8 piece servings. Very tasty with spicy peanut dipping sauce, too!
