Glazed Tofu with VeggiesSubmitted by: SCUZNER
1 Tbsp Olive Oil
1 Medium Onion, peeled, halved, and sliced thin
1 Clove Garlic, chopped
1 Block Extra Firm Tofu, sliced into 1/4 x 1/4 x 1 inch blocks
1/4 Cup Raw Cashews
2 Tbsp Brown Sugar, packed
1/2 Cup Fresh Cilantro, chopped
2 Cups Fresh Green Beans
1 Large Bell Pepper, Orange, red, or yellow is best
1/2 Cup water
Add cashews and stir until lightly browned.
Add sugar melt, stirring to coat.
Add cilantro and quickly mix. Remove from pan and put in a warm serving dish.
Add green beans and bell pepper to pan and stir quickly for 1 minute to coat with oil and seasoning, then add water and cover partially for 3-4 minutes until crisp tender and water almost gone.
Add tofu mixture back to pan and stir to incorporate and warm quickly.
Serve over jasmine rice.
