Tuscano Soup with Potato, Kale and Sausage

Introduction

This is a delicious soup. Hearty, comforting, and keeps you full! I like to add a little garlic powder and red pepper flakes to give a little kick! This is a delicious soup. Hearty, comforting, and keeps you full! I like to add a little garlic powder and red pepper flakes to give a little kick!
Number of Servings: 8

Ingredients

    1 Lb Ground Pork (or any sausage you prefer)
    2 lb bag fresh kale
    russet potatoes
    4 cups Fat free Chicken Broth (I use low sodium type)
    Water to cover the rest of the ingredients
    1/2 cup Fat Free Half and Half

Directions

Brown pork in large soup pan. Season to taste. Add chopped kale, removing the tough stems. Cut potatoes in half lengthwise, then lice into thin half circles. Add chicken broth to cover all ingredients in the pan. bring to a boil then lower to a simmer. Cover and simmer, stirring occasionally until all veggies are tender. This usually takes 3-4 hours. Add ff half and half about 10 minutes before serving. Enjoy! Makes 8 generous servings.
