2 tbsp olive oil
1/2 lb ground beef, lean
1 cup chopped onion
1 tsp salt
1 tbsp pepper
2 cups sliced summer squash
2 cups diced canned tomato
1 cup elbow macaroni (uncooked)
1 clove diced garlic
1 tbsp italian seasoning
2) combine all other ingredients and simmer covered until macaroni is tender.
Makes 4 1-cup servings 322.1 calories per serving
