Miso Mung Bean Fettuchini

Introduction

This meal is comforting as well as bursting with flavor. If you have never tried Mung Bean Fettuchini don't be scared, it has a very mild taste and is high in protein. Number of Servings: 4

Ingredients

    1/2 package mung bean fettuchini, (about 4 oz)
    1/2 cup carrots
    1/2 cup tofu
    1/2 cup broccoli
    1/2 TB grated ginger
    2 TB Miso

Directions


Place water in a 2 quart saucepan, bring to a boil. Add the fettuchini and cook for approximately 5 minutes or until pasta is tender. Strain, rinse with cold water, set aside.
Cut carrots into matchstick size, cut at an angle to get a wide piece then cut into small strips. Cut broccoli into small bite size pieces. Place broccoli and carrots into a saute pan with a little olive oil. Cube the tofu and add into the pan. Cook until vegetables are soft and tofu has browned.
Add in the fettuchini and the grated ginger. In a separate small bowl mix the miso with 4 tb water. Remove pan from stove top and pour mizo mixture over pasta and coat thoroughly. Enjoy.
