Mediterranian Quinoa Salad

Ingredients

1cup quinoa
1 ¼ cup water
½ teaspoon salt
2 cloves garlic
1 TB onion
1 TB olive oil
½ cup chopped cucumbers
1 cup chopped spinach
3 sundried tomatoes chopped
½ cup canned artichoke drained and chopped
¼ cup feta cheese
¼ cup roasted walnuts
2TB lemon juice
2TB olive oil
1 tsp fresh thyme
1/4 ts rosemary
Directions
Rinse quinoa with water and drain. Place rinsed quinoa, salt, and water in a 2-quart pot. Bring to a boil, reduce heat to low, cover, and let simmer 15 to 20 minutes. Don’t stir the grain while it is cooking. Test for doneness by tilting the pan to one side, making sure all of the water has been absorbed. Set aside to cool.
Combine ingredients for dressing in a small bowl and set aside.
In a small sauté pan, combine garlic, onion, and 1 TB olive oil. Sauté over medium low heat until onion becomes translucent.
Combine remaining ingredients in a medium-large bowl, add in cooled quinoa and pour dressing over.
