Ingredients

    3 large zucchini, sliced
    1 small onion
    2 C hot water or more
    3 chicken bouillon cubes
    3 oz cream cheese

Directions

Boil water and cubes. Add zucchini and onion. Cook until very tender. Put in blender with cream cheese to puree. Season with salt and pepper. Enjoy

    I made a big quantity of this soup and then froze it in individual portions (as I'm the only one who likes Zucchinis), but I used plain yoghurt instead of the cheese. - 8/18/09
