Ingredients

    3 chicken breasts, halved and pounded thin
    1/2 c. flour
    1/4 c. eggbeaters (egg substitute)
    1 c. breadcrumbs, seasoned
    3 T. olive oil

Directions

Makes 6 servings

Half chicken breasts and pound each half to approx. 1/4 inch thick. Dredge in flour, dip in egg, dredge in bread crumbs and heat in oil over moderate heat. I cook in two batches, approx. 20 minutes per batch. Fry until golden and meat is cooked through.
