Tofu with mixed vegetables

Ingredients

20oz High Protein Tofu, cubed
1 Cup Low Sodium Vegetable Broth
1 16oz package frozen mixed vegetables
1 tbsp cornstarch
1 tbsp canola oil
1 tbsp garlic, minced
1 tbsp water
Directions
Thaw frozen vegetables and drain off water. Heat oil in pan and add cubed tofu and garlic. Stir until tofu is heated through, about 3-5 minutes. Add drained mixed vegetables and broth. Heat until broth boils, about 3-5 minutes. Mix cornstarch and water. Add to mixture and heat until sauce is thickened to desired consistency.
