Soba Noodles with Shrimp & Spinach

Ingredients

    4 ounces soba noodles
    1 tbsp olive oil
    1 tbsp low-sodium soy sauce or liquid aminos
    1/2 large onion or 1 small, chopped
    6 garlic cloves, coarsely chopped
    1 tbsp lemon juice
    1/2 pound (8 ounces) shrimp, peeled
    1 cup of fresh or frozen peas
    1/2 cup vegetable broth
    2 cups or 2 handfulls spinach, tough stems removed
    sea salt and pepper, to taste
    liquid stevia, optional

Directions

1. Bring a large pot of water to a boil. Add the noodles and cook, stirring, until tender, 4-6 minutes. Drain and rinse under cold water.

2. In a bowl, combine 1/2 tbsp of oil with 1/2 tbsp soy sauce or liquid aminos. Add 1 drop of liquid stevia if desired. Add the noodles and toss.

3. In a skillet, heat 1/2 tablespoon of the oil. Add the onions and cook over moderate heat, stirring, until golden brown and crisp, 3 minutes. Add the garlic to the skillet and cook over low heat until golden and crisp, 2 minutes.

4. While onion & garlic cook, heat a grill or preheat a grill pan. Sprinkle the shrimp with lemon juice and grill the shrimp over high heat, turning once. About 3 minutes. Once finished, add shrimp to soba.

5. Add peas, along with the other 1/2 tbsp of soy sauce/LA, to the onion and garlic. Saute for 2 minutes. Add vegetable broth, and bring to a boil. Reduce heat and let simmer for 2 minutes. Add spinach, stir, and let it wilt. Add salt and pepper, to taste.

6. Add spinach mixture, including liquid, to the shrimp and soba noodles. Stir & enjoy!!
