Beef and Noodles

Introduction

Something so simple and tastes great! Something so simple and tastes great!
Number of Servings: 6

Ingredients

    1 lb. beef round steak, cut into bite size pieces
    1/2 cup chopped onion (about 1/2 a medium onion)
    1 tbsp olive oil
    10.5 oz low-sodium beef broth
    8 oz (or about 4 cups) uncooked egg noodles
    4 cups water
    salt and pepper to taste

Directions

In a 3.5 qt pot, heat olive oil. Add onion and round steak. Stir until all meat is browned and onions are translucent. Add beef broth and bring to a boil.
Reduce heat and simmer about 15 -20 minutes.
When meat is tender, add 4 cups water.
Increase heat to high and bring to a boil. Add egg noodles. Boil for 10 minutes, stirring occasionally to make sure all noodles get cooked.
After 10 minutes, remove from heat, cover and let stand for 15 minutes to let noodles absorb more juice.
Serve with steamed broccoli, if desired.

    This recipe was great. Full of flavor and plenty of juice to keep it moist. I got 6 servings and everyone enjoyed it more than the regular beef and noodles we usually eat with gravy.Keep the great recipes coming. - 5/18/07

    I love this!!! i tried it tonight with beef stew meat that i had and i had bag of noodles that was going to expire so i used it up and used this repices.     I've made this twice the first time was ok (I didn't season the meat before it was cooked). The second time was wonderful. I seasoned the meat with the salt and pepper before I cooked it and it helped a whole lot. - 8/9/08

    Simple and delicious! My parents used to make beef and noodles whenever we had leftover roast beef, and I've been craving it. I added a little garlic to the onion and beef for flavor and made it very peppery, just like Dad used to. Perfect! - 3/1/08

    This is a good recipe. I also added a heaping Tablespoon of minced garlic to the onions and used salt & pepper to season...even with that we still found it slightly bland. I put a little fat free sour cream in with mine and it was SO tasty! This is a great "base recipe" to add all your faves to! - 1/27/10

    Green pepper, black pepper, mushrooms, garlic... I get it, but that onion soup mix sounds interesting. But when METSMES said- missing the mashed potatoes & gravy, and then JDKTIGGER said- like beef stroganoff without the sour cream... that was it! LOL! I'm hooked! Can't wait to try it.   • I slowed cooked a roast the day before. I took the juice from the roast and cooked the noodles in it. Once they were cooked - I added the roast meat shredded. Covered the pot - let it sit for about 15 minutes and then served. It was delicous. My husband wants me to make again soon! - 1/7/11
