HEALTHY Spinach Pie

Introduction

Delicious crustless spinach pie. Breakfast for a week idea: Cut into wedges and wrap individually. Each morning, pop a wedge in the microwave to reheat. Delicious, nutritious, and quick! Ingredients

    2 10oz pkgs frozen spinach, thawed
    1 pint (16 ounces) lowfat(1%) cottage cheese
    1 cup egg beaters egg substitute or 4 eggs
    1/4 teaspoon salt (optional)
    6 tablespoons ground flax seed (meal)
    1 tablespoon butter
    1 tablespoon grated parmesan cheese


Tips

Boost the flavor by adding sauteed mushrooms and/or onions into the spinach combination before baking. Canadian bacon is a terrific low-fat option for meat lovers :)


Directions

Heat oven to 375F. Spray a 9-inch pie plate with cooking spray. Squeeze liquid from thawed spinach. In large bowl, combine egg beaters, cottage cheese, salt, 5 tblsp flax seed meal, and spinach. Pour mixture into pie plate. Dot with butter and sprinkle with reserved flax seed meal and parmesan cheese. Bake 45 minutes. Cut into wedges and serve.
