Coconut Pineapple Sauce

Introduction

This sweet/savory sauce goes well with chicken and rice/bulgur/etc. This sweet/savory sauce goes well with chicken and rice/bulgur/etc.
Number of Servings: 4

Ingredients

    1/2 cup crushed pineapple, drained
    1 1/2 cup sliced red pepper
    2 cups diced bok choy (small head)
    1 jalapeno pepper, diced and seeded
    3/4 cup lite coconut milk
    1 T brown sugar
    1 t olive oil

Directions

Heat olive oil in skillet. Add red pepper and bok choy. Saute until tender. Add jalapeno and cook 1-2 minutes. Add coconut milk and brown sugar. Stir to combine and heat through.

Serve with chicken and rice / bulgur / etc.

Makes 4 half-cup servings.
