Mandarin Orange Chicken and Pasta

Introduction

This is good with chicken, would be very good with shrimp. To make it more complete as a meal, you could add chopped broccoli or a broccoli-cauliflower mix. (not included in nutritional information)
I used a waterless cookware electric skillet for the chicken. It cooks it quite quickly - you will have to adjust cooking times and start the chicken earlier if you have to cook it conventionally on the stove.

Ingredients

    12 oz bag Ronzoni Smart Taste Egg Noodles
    1 1/2 lbs boneless, skinless chicken breast (about 3 breast halves, depending on size)
    1 tsp Canola Oil
    1 11 oz can mandarin oranges
    1/4 cup Emeril's Orange Herb with Poppy Seed baste and marinade
    1/2 oz chipotle marinated garlic cloves (about 6), minced
    2 tsp cornstarch
    1/4 cup water
    1 Tbsp extra virgin Olive Oil
    1/2 tsp kosher salt
    1/2 - 1 tsp fresh ground black pepper
    1/4 cup shredded parmesan cheese
    1 tsp or more fresh rosemary

Directions

In large pot, bring water to boil for pasta.
In the meantime, begin heating waterless skillet. Mince garlic. Add about 1/2 tsp canola oil to skillet. Place chicken breast in hot skillet. Top with can of mandarin oranges, minced garlic, and Orange Herb marinade. Cover pan with the steam vents open.
Add egg noodles to boiling water, cook 8 min.
As soon as skillet begins whistling, close vents, lower temp to simmer.
Drain egg noodles. Put back in pan, mix in olive oil, salt, pepper, rosemary, Parmesan cheese.
Check chicken for doneness. Remove chicken from skillet. Mix cornstarch and water together, add to liquid in skillet to make sauce. Thin with extra water if necessary.
Put 1 1/2 cups noodles on plate, top with 1/2 chicken breast and spoon 1/6th of the sauce over the top. If you cooked broccoli or broccoli/cauliflower, that could be mixed into the sauce first, or served on the side.
